So, to the eternal question. what’s the difference between a Cookie and a Biscuit?

Well, many would simply say that it depends on which part of the world you come from, believing that what is called a cookie in some places, such as America, is called a Biscuit in others, such as Australia. However, we would strongly suggest that isn’t necessarily so.
While some may well disagree with us, we believe that a TRUE traditional Cookie is very different to a Biscuit, no matter where you come from in the world.

A Biscuit (outside of the USA) traditionally has either a crunchy/crispy or even soft texture and are always dry. The one texture that a biscuit never is, is chewy. Whereas, the hallmark of a great traditional style Cookie, is, while having a light crunchy bottom and slightly crispy top, remains soft, moist and deliciously chewy on the inside.

It’s that wonderful combination of textures that really makes a Cookie completely different to what Australian’s would consider a Biscuit.

Ingredients such as authentic Belgium Coverture Chocolate (Dark, Milk, White and Caramelised) for an unbeatable chocolatey hit. A combination of both French and New Zealand world-class grass-fed Butters, both caramelised and combined to give a deep, rich and beautiful buttery flavour.

Of course, we also only use Free Range Eggs, Maldon Sea Salt Flakes, REAL Vanilla Paste (beans and all) and we even use a combination of high-quality Flours to ensure that perfect Cookie texture and consistency.

Needless to say, we also use ZERO artificial preservatives to keep those delicious Cookie flavours true for maximum enjoyment.
